We have a feeling that many of you will have at least one event of national importance to celebrate this week, and every celebration deserves a special drink to mark the occasion. This weekend, we suggest you try, The Monarch. We spoke to Bacardi South Africa Brand Ambassador and creator of this tasty concoction, Mr Nic Koumbarakis.
“I recently developed ‘The Monarch’, drawing inspiration from various themes. Sir Edwin Landseer created an oil painting known as “The Monarch of Glen” in 1851, which became extremely popular through the 1800s. The original artwork was purchased by John Dewar’s & Sons in 1919. I mention this bit of history because Dewar’s current Master Blender, Stephanie Macleod – who recently won Master Distiller of the Year 2017 – used the painting many decades later as inspiration in creating Dewar’s 15 YR Old Blended Scotch Whisky.
The drink is relatively easy to make and all ingredients can be sourced locally in South Africa. If you do not have a cocktail shaker, use a mason jar. Like anything that you do, cocktail making is an art form. I would hazard to speculate that you would not cut corners when hosting guests, preparing and presenting that incredible meal, so why when it comes to creating drinks? Use fresh, good quality ingredients, including ice. Best enjoyed for any occasion, anytime, anywhere.”

15 ML FULL CREAM SHERRY
15 ML CRÈME DE CACAO LIQUEUR
15 ML FRESHLY PRESSED LEMON JUICE
*15 ML ROOIBOS SUGAR SOLUTION
3 X GREEN CARDAMON PODS
*MAKING THE ROOIBOS SOLUTION. MAKES 700ML.
IN A PAN, ON LOW HEAT, ADD 350 GRAMS OF WATER AND 350 GRAMS OF CASTOR SUGAR. STIR UNTIL FULLY DISSOLVED. ADD 4 TEASPOONS OF LOOSE LEAF ROOIBOS TEA AND A PINCH OF HIMALAYAN SALT. ALLOW THE TEA LEAVES TO STEEP OVER A PERIOD OF ONE HOUR. FINE STRAIN INTO A BOTTLE AND REFRIGERATE.
IN A COCKTAIL SHAKER/MASON JAR, ADD ALL INGREDIENTS, FILL WITH ICE. SHAKE AND FINE STRAIN.
